Mmmmm......Spring!

Spring has finally made it! Gorgeous weekend--high 60s yesterday and low 70s today. Now I know that it will be nice for the rest of April and then sometime in early May it will start raining and won't stop until July 6th. After all, that's how it goes every single year.

Anyway, it was nice this weekend and, to make it even better, I had very little planned (for once!). So, I did a wonderful 10K walk yesterday in the West Hills. And, since today was even nicer, I did another one in Beaverton. And I wore shorts...both days! True, we start wearing shorts here in Oregon when it hits 55 and sunny, but it's still a big deal when you put those on the first time in the spring!

But, here's what did it...here is the one thing that I did this evening that brought it all home...the winter is FINALLY over! I had to run to Rite Aid to refill a prescription and to buy a new bottle of contact lens solution since what I was using before was giving me eye fungus. (I found this out when I received a voice mail from my mom saying, "Your father and I would like to discuss your contact lens solution with you." Messages like that are never good.)

So, after I picked up the essentials I found myself at the candy aisle. Now, I normally avoid this area since sugar is generally bad and, for me personally, turns me into Tigger from Winnie the Pooh. I started innocently, checking out the breath mints and sugarless gum. Then my eyes found them....the Junior Mints!

Now, these Junior Mints were destined for a better ending than what you might think. Instead of devouring them in the car (I bought orange tic-tacs for that!), I waited until I got home and calmly placed them in the freezer. Yes, these were no ordinary Junior Mints. They were to become FROZEN Junior Mints.

I first discovered the beauty that is frozen Junior Mints when I lived in Boston. It was a humid day in August and the campus where I worked was empty (because it was SUMMER and the only schmucks left were those who had to actually work there!) and I was looking for some relief. I had run to the campus convenience store to pick up a diet coke and some sugar (I felt the need to liven things up in the office with a little Tigger-ness). They were out of good 'n plenty's, so I got the junior mints instead. Since it was so hot, I was afraid that they mints had "softened" on the walk back to the office, so I stuck them in the freezer.

Well, I forgot about them for a while and when I remembered, I found the best warm weather treat! They don't freeze completely, so you don't have to worry about breaking a tooth. But they will cool you down fast than ice cream! Try it!
